Country Crock and A Very Veggie World

It’s important for kids to eat their veggies, but let’s face it sometimes it can be a challenge.

My oldest was always a picky eater, but lately he has left his comfort zone and has started to experiment a little more.

My 3-year-old barely eats, so when I was invited to the launch of “A Very Veggie World” with Country Crock I was thrilled!

Not only do the kids need some inspiration, but I do too.

A Very Veggie World is a new cookbook that gives you creative ideas and recipes for serving veggies to your family.

Author, Clare Crespo, creates culinary masterpieces that make veggies look exciting and enticing to try.

My son went crazy over the Mt. Veggie Volcano:

Clare was on hand to walk us through making some of her fun creations.

We made a Veggie Wagon:

We also made a Pizza Flag and my oldest jumped right in and took the lead:

It’s super easy and fun to make.

Ingredients:

  • 6 ounces part skim mozzarella cheese slices
  • 1 Tbsp. Country Crock Spread
  • 2 cups fresh spinach leaves, rinsed and patted dry
  • 1 frozen pizza dough, thawed
  • 1 cup pizza sauce
  • 2 plum tomatoes, sliced in half lengthwise and cut into slices or 1 sliced red bell pepper or mixture of both

Directions

  1. Take two slices of mozzarella cheese and stack together. Use kitchen scissors or small knife to cut a few star shapes out of cheese {you can use cookie cutter}. Slice remaining cheese into 1-ince slices.
  2. Preheat oven to 450 degrees. Melt Country Crock Spread in a large nonstick skillet over medium heat. Add spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
  3. Stretch pizza dough to fit a rectangular pan. Spread pizza sauce evenly over dough. Sprinkle spinach over top left corner of dough. Place stars on the spinach. Lay tomatoes {or peppers} and cheese strips in alternating strips on rest of pizza.

4. Bake 10 to 20 minutes until cheese is melted and starting to turn golden and crust is lightly brown.

My son was so proud of myself and it was super tasty!

We had such a blast at the event. My mom and I had a little fun playing with the boys and the life sized “A Very Veggie World” book.

Thanks for sharing, Tina! I have downloaded the recipe book. I hope this will help me to feed them veggies more often.

Actually when we went to the food store last night my older son asked if we could make the pizza again. I was so excited he asked me! So I got all the ingredients {including spinach, tomatoes and peppers} and that’s what we are going to have tonight. Try this one to start…Good luck!

That pizza flag is calling to me :) Sounds like fun! I will have to share with some of my mommy friends who have the same problems feeding their kids veggies.
