I love trying new recipes and experimenting in the kitchen but like most families, dinner time is very hectic around here. I barely have time to cook anymore with balancing work, school schedules, meltdowns and everything else that comes with being a mom.
Recently, I have been trying to cook easy, nutritious meals in less than 20 minutes. And when I have my act together, I love using my crock-pot…what a life-saver!
I am going to share with you the quickest and easiest chicken recipe. Not only is it fast to make, but it so yummy my boys actually gobble it up…and they are picky eaters!
Quickest {and Yummiest} Chicken Recipe
- 4 boneless, skinless chicken breasts
- 1 pkg dry Italian dressing mix
- 1 cup chicken broth
1. PLACE chicken in crock-pot. Sprinkle dressing mix on chicken and add broth.
2. COVER. Cook on low for 6 to 8 hours.
*Seriously could it get any easier?
Tips;
1. Add extra chicken broth for juicier chicken.
2. Sprinkle some of the dressing mix in the juice for extra, yummy flavor.
3. If you really want to be lazy; throw chicken breasts in frozen. Half way through cooking, break a part {they still come out delicious}.
4. Our favorite – add chicken on top of rice and drizzle extra broth over it. Add a veggie and you have a delicious dinner!
What is your go to quick meal for busy nights?

Seriously I do it half asleep and like I said I even throw the chicken in frozen. Talk about lazy :0
I’m going to try this – if it’s easy it’s for me. Thanks!

I LOVE the crock pot for this exact reason. SO EASY. I frequently make beef stew and bbq ribs in there for quick and easy meals! Thanks for sharing – that chicken must come out so juicy!

Thanks! I love using my crock pot. My fav is pulled pork – pork butt (I know!), garlic, onions, ale beer (or ginger ale). After it’s finished in the crock pot, shred the pork and add BBQ sauce. Done.

I love me the crock pot!!! It is SO EASY! I made a crock pot lasagna last night- cooked the noodles and everything! I need to make this chicken. The less I have to deal with raw chicken, the better!

I don’t use dressing mixes, but I bet I could do something very similar with some ingredients from my pantry and spice cabinet. Thanks for sharing.

I’m a vegetarian, but my family is not. This recipe is so easy (and it limits the handling of raw meat — eww), that even I could do it. I’m going to try it soon. Thanks!

I can’t wait to try this one, Tina! I love the Crock-Pot, a life- and a time saver for sure. This looks super easy and I love that there aren’t 20 ingredients.
Our go-to meal is usually pasta – Linguine with oil and garlic or I pick up a rotisserie chicken and throw together chicken tortilla soup. It’s yummy and fast!

I normally don’t do chicken in the crock pot because it turns out dry and chewy, but I may need to try this one. I love a fast meal
Thanks!
