Menu Plan Monday

You probably realized that I skipped last week.  Why? Well my family all had the stomach bug.  Started with Big A, then Little B got it on Mother’s Day and then the hubby came home a few days later not feeling well.

I am still crossing my fingers that I don’t get it. I think sometimes Moms have super powers and build up such a strong immune system {I probably just spoke to soon}.

This week is a busy one so our menu is a bit light.  We are headed Wednesday night to NYC  because Little B will be in a Huggies Fashion Show on Thursday.

We will be having breakfast and lunch with a guest celebrity so make sure to follow me on Twitter to find out who it is! I will write a recap about our experience when we get back.

So onto our menu for the week. Our breakfast and lunch menu is pretty much the same:

Breakfast: Cereal, eggs, homemade pancakes & waffles and oatmeal.

Lunch: Veggies and dip, peanut butter sandwiches, pasta and dinner left overs.

Our Dinner Menu:

Monday: Going to a friend’s house which means I don’t have to cook!

Tuesday: Rigatoni Primavera with Chicken and fresh bread {see recipe below}

Wednesday: Going to NYC for the night with the family!

Thursday: Ham-Taleggio Grilled Cheese and Soup

Friday: Balsamic chicken, roasted veggies and rice

Saturday: Wedding


Rigatoni Primavera with Chicken


Ingredients

  • 12 oz Rigatoni
  • 2 tbsp Oil
  • 9 oz Veggies {I use broccoli and mushrooms usually}
  • Chicken {I use a rotisserie chicken}
  • 1 tbsp garlic
  • 1/2 cup fresh Parmesan cheese
  • Basil
  • 1 cup chicken broth

Directions

  • Boil rigatoni – reserve one cup of water
  • Heat olive oil, add veggies and chicken, saute for two minutes
  • Add garlic and saute for one minute
  • Stir in broth, reduce heat, cover and simmer for three minutes
  • Toss with drained pasta, parmesan cheese, basil and reserved cooking water
  • You may have to add a touch of salt for flavor

oh all of that sounds so good! I am not 100% sure what is on the menu for us this week – but i think I will be trying out some new recipes

Ok, I think I am a little bit too excited about this Huggies fashion show and about the guest celeb!! Can you give us a little clue? How FUN. Make sure to take pictures and have a great trip!!

And keeping my fingers crossed that you don’t get sick. My hubs and little guy had the stomach bug last week and then I got hit with food poisoning this weekend and it’s still not finished. Good times.

Glad to hear your little one is feeling better! …. and so cool that he’ll be in the Huggies Fashion show!
